Microversos grows from Jonathan Gómez’s passion for mycology, regenerative agriculture, and the power of mushrooms to reshape how we eat, care for health, and inhabit ecosystems. A self-taught grower and Salvadoran entrepreneur, Jonathan started small—research, practice, and curiosity—until experiments became accessible, reproducible cultivation methods.
Today Microversos is building an integrated mycology platform in El Salvador: we grow edible and medicinal mushrooms, create products and educational material, advise producers, and bring the fungi world closer to more people.
Our vision goes beyond producing mushrooms. We want to weave a network of growers, farmers, restaurants, researchers, and enthusiasts that can sustain a local mycological industry—rooted in knowledge and regenerative practice.
From the lab to every grow we help start, mycelium is more than a fascinating organism: it is a way to see nature’s interconnection—and a real chance to build more resilient food systems.
